Instant Pot® Easy Lentil Soup for Two
1 small sweet yellow onion, finely chopped
2 medium carrots, cut into 1/2-inch pieces
3/4 cup chopped roasted red bell peppers
1/4 cup liquid from roasted red bell peppers
1 garlic clove, minced
1/8 tsp dried thyme
3/4 cup Spanish Brown Pardina Lentils
2 1/2 cups water
1/2 tsp Colgin liquid smoke
pinch ground bay leaf
2 Tbsp chopped fresh cilantro
1 tsp balsamic vinegar

Set iPot to [Sauté] with [Normal] heat setting. Cook onions and carrots for 5 minutes. Stir in bell peppers, bell pepper liquid, garlic, and thyme; cook 30 seconds. Add lentils, water, liquid smoke, and ground bay leaf. Lock on lid; turn steam release handle to SEALING.
Reset iPot to [Pressure Cook] for 4 minutes; cancel Keep Warm mode. Wait 10 minutes after cook time then turn the steam release handle to VENTING.
Serve individual portions with cilantro and a spritz with vinegar.

  1. I made this tonight and doubles the recipe. It was soooo good, everyone loved it. I will be making a big pot and freezing for lunches.

  2. I TOO own an OLD coffee grinder, the top part also broken but the parts fit and stay together.. …no "effs" are given, the motor still works and I got it about 20 years ago. I use it for grinding flax seeds, coffee and I might just try grinding up whole bay leaves!

  3. Great idea to grind the bay leaf. Going to do that with mine! My coffee grinder I bought at a yard sale for two dollars about twenty years ago!
