  1. Sorry but you need to try the original version that goes back to the late 1700's. Before refrigeration sauerkraut was a staple food due to it being fermented and kept without refrigeration. Take whole pork ribs known a panic ribs today. Cut them into 3 to 4 ribs groups. Place them in a deep pot with kraut layered in between the ribs. Fully fill and cover the meat with kraut. Add water to pot but not above the kraut layer on top. Place pot on stove top and boil for 4 to 5 hours or until meat falls off the bone. Served traditional with buttered mash potatoes and black eye peas. What made this a new years tradition that went back hundreds of years was the idea of placing a silver coin in the peas prior to serving. Who ever got the coin in their spoon full had good luck for the year as long as they didn't spend the coin. This was the start of the lucky coin people carry even today. This meal goes back in our family to 1812. It is so easy to make with no extra spices we often cook it more than on time a years. When done right the fat from the pork will darken the kraut. This is the best kind of kraut to serve over hot dogs of you like a more mild kraut flavor.
