Chicken recipes are probably my most favorite thing to cook inside of the Instant Pot. One of the best things about them… they are EASY!

If you have never cooked chicken in the Instant Pot, you should really give it a try! Now if you are a beginner, I would highly suggest watching a few videos to get the hang of the Instant Pot.

Once you understand the Instant Pot functions, it will be so easy to make recipes! (Especially chicken recipes!)

So bring on all the easy chicken recipes! I am ready to use my Instant Pot and EAT!

Chicken Enchilada Rice Bowls:Here are the ingredients you will need:
2 cups white rice
2 cups of chicken, cooked and chopped
2 1/2 cups water
1 (15 oz) can enchilada sauce
1 (14.5 oz) can black beans, rinsed and drained
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder

Push Manual, cook for 10 minutes then do a quick release. Serve with toppings:
Toppings I like to use:
1-2 cups of your favorite cheddar (depending on how cheesy you want it)
Sour cream
Cilantro, for garnish

  1. Love your recipes ! I work so this helps so much! Loving my new instant pot. I blew it on the enchilada recipe. Used a regular measuring cup for rice instead of the plastic cup & a little too much sauce. The rice wasn’t cooked and the pressure level didn’t pop up. Came out mushy when tried to cook more.. small detail for beginners. Bought the meat claws but it’s hot when shred in pot . Wait to cool? Thanks for all your time & great videos! Keep them coming

  3. I need to get an Instant Pot! Since there are different sizes, I am not sure which to get. Other than first cost, is there a downside to getting the largest size even if I don't need that much capacity for each cook?

  6. Anyone have advice? I tried the chicken enchilada rice and it lacked flavor. I honestly blame it on the enchilada I sauce as it didn’t have flavor. It was El Paso brand.
